Move about 2 inches down and fold the edge over again to form a pleat. Continue around the brie, creating pleats until all edges are folded over. It’s fine if the brie isn’t fully covered; this will be the base.
      • Line a rimmed baking sheet with parchment paper and place the brie, pleat side down (smooth side up), on the sheet.

      • Crack an egg into a bowl and whisk it. Add 1 tablespoon of water and whisk to combine. Brush the egg wash over the pie crust using a pastry brush.

      • Bake for 18-22 minutes, or until the crust is fully cooked and the top of the brie is shiny and golden brown.
